本文就Maillard反应产物中呋喃、吡咯、噻吩的芳香性及亲电反应活性进行讨论,并从电子密度的比较对Maillard反应产物的抗氧化性作机理上的讨论。为Maillard反应的应用提供理论依据。
In this paper, the aromaticity and electrophilic reactivity of furan, pyrrole and thiophene in Maillard reaction products are discussed. The mechanism of Maillard reaction product oxidation resistance is discussed based on the electron density comparison. It provides a theoretical basis for the application of Maillard reaction.
