蔬菜瓜果中维生素的含量常因品种,土壤,气候,栽培方法,收获季节,成熟情况等差别而不同。国人对于我国食品营养成分的测定虽然做过不少工作,但是所分析的食物多限于沿海地区大城市,如北京、上海等地的食物。西北、兰州等地食物中营养成分的测定则甚少。我们从1958年4月开始对兰州市区生产的蔬菜瓜果中抗坏血酸的含量进行测定,本文仅报告关于兰州市蔬菜瓜果中抗坏血酸含量测定的初步结果。

We started from April 1958 to determine the amount of ascorbic acid in vegetables and fruits produced in Lanzhou. This article reports only preliminary results on the determination of ascorbic acid in vegetables and fruits in Lanzhou.
