现代食品技术在极大地丰富食品生产、将人类带入丰裕社会的同时,也面临着食品技术的异化问题。本文系统考察了现代食品技术异化的概念释义,归纳出食品技术异化的两种类型;并详细分析了其表征及其负面影响,如生产消费主体的异化、食品流通环节的异化、产销关系的异化、饮食文化的异化等现实表现;然后从哲学上反思食品技术异化产生的本质,即技术复杂性与人类认知有限性、人类价值观失范与技术理性至上、食品的工业化与市场化是导致现代食品技术异化的根源;最后提出,根植于本地化生产、目标是经济上有利于生产者和消费者、生产和流通中采用生态友好的方式、在社区成员间增强社会信任和公平的替代性食物体系成为消解现代食品技术异化风险的路径之一。
Modern food technology, while greatly enriching food production and bringing human beings into an affluent society, is also facing the problem of alienation of food technologies. Then from the philosophical reflections on the nature of food technology alienation, namely the technical complexity and limited human cognition, the loss of human values and technological rationality, the industrialization and marketization of food are the main causes of modern food Finally, it is proposed that the target is to be economically beneficial to producers and consumers, to adopt an eco-friendly approach in production and distribution, and to enhance social trust and fair alternative food systems among community members Become one of the ways to eliminate the risk of alienation of modern food technology.
