【摘 要】
：
以普通玉米淀粉为试验材料,采用响应面法优化普鲁兰酶酶法制备玉米抗性淀粉的工艺参数。结果表明,普鲁兰酶加量、酶解时间、老化温度以及老化时间对抗性淀粉含量均有显著影响
