采用SPME-GCMS法分析3个品牌凉茶的挥发性香气,3种凉茶分别分析鉴定出59种,63种和59种组分。3种凉茶饮料中共检测到醇、醛、酮类物质,主要特征香气成分为芳樟醇、4-松油醇、1-辛烯-3-醇、香叶醇、橙花叔醇、壬醛、癸醛、苯甲醛、乙位突厥烯酮等。其中芳樟醇的含量最大,分别为:26.675%,16.568%和28.923%。
The volatile aroma of three brands of herbal tea was analyzed by SPME-GCMS, and 59 species, 63 species and 59 species were identified respectively by 3 kinds of herbal tea. Alcohols, aldehydes and ketones were detected in the three herbal tea drinks. The main characteristic aroma components were linalool, 4-terpineol, 1-octen-3-ol, geraniol, nerolidol, , Decanal, benzaldehyde, B bitternes and so on. Among them, linalool was the largest, accounting for 26.675%, 16.568% and 28.923% respectively.
