登莱海参,是指产自山东半岛海域(主要是半岛北部、东部)的刺参。自古以来,登莱海参在饮食界享有极高的声誉。明崇祯四年(1631)辛未科榜眼、清顺治年间任国子监祭酒的江苏太仓人吴伟业在《梅村集》称;“海参,产登莱海中,品质亦属上乘。”他还特为登莱海参作《海参》诗:“预使焊汤洗,迟才入鼎铛。禁犹宽北海,馔可佐南烹。莫辨虫鱼族,休疑草木名。但将滋味补,勿药养余生。”清光绪《增修登州府志》记载:“海参,棘皮动物,形圆如黄瓜,色黑,体壁多肌肉的周边有触手,是名贵海物。”
