英国食品标准局的调查显示,73%的零售鲜鸡肉携带空肠弯曲菌,大概有三分之一的人群一生中有可能被弯曲菌感染。空肠弯曲菌是什么?空肠弯曲菌是一种细菌,身长仅为1.5~3.5μm,比头发丝小多了,我们肉眼是看不见的,它的身材呈弯曲杆状、两端稍细。它可在低氧环境下生长。目前已发现的弯曲菌属有21个种和多个亚种,但人类感染多数是由空肠弯曲菌和结肠弯曲菌引起的,其中由空肠弯曲菌引起的约占90%。全世界每年由空肠弯曲菌引起的食源性腹泻病例达4~5亿人次。
A survey by the British Food Standards Agency shows that 73% of retail fresh chicken carries Campylobacter jejuni, and about one in three people may be infected with Campylobacter during their lifetime. What is Campylobacter jejuni? Campylobacter jejuni is a bacterium, body length of only 1.5 ~ 3.5μm, much smaller than the hair, and our naked eye is invisible, and its body was bent rod-shaped, slightly smaller at both ends. It can grow in hypoxic environment. Campylobacter currently has 21 species and multiple subspecies, but the majority of human infections caused by Campylobacter jejuni and Campylobacter coli, which caused by Campylobacter jejuni accounted for about 90%. The annual incidence of food-borne diarrhea caused by Campylobacter jejuni reaches 400 to 500 million in the world.
