在实验动物或健康志愿者的饮食中增加蔗糖含量对机体可产生严重影响,有些影响与冠心病相似,有些则与成年发病型糖尿病相同,例如可产生糖耐量降低、视网膜病变、肾病及组织对胰岛素敏感性降低等。作者为了进一步了解高糖饮食的影响,选择了14名健康年青志愿者,把他们平均每天饮食摄取蔗糖115g 增加至260g,共3周,与英国人每天饮食平均摄取蔗糖125克可成对照。结果高糖饮食3周结束,14例志愿者中有10例空腹血高密度脂蛋白胆固醇(HDL cholesterol)浓度下降,当恢复他们的习惯饮食后2周才升到原来水
