甘草是我国著名传统中药材,使用历史悠久,应用领域极为广泛。甘草为豆科植物甘草、胀果甘草或光果甘草,除此之外,由于甘草的需求量很大,地方习惯用品还有黄甘草、粗毛甘草、云南甘草等。甘草的主要成分除了甘草酸之外,还有黄酮类化合物等16余种成分。由于甘草味甜,在世界上的一些地区有从光果甘草中提取甘草甜素作为甜味添加剂,加入到糕点、糖果、口香糖等食品中的习惯。
Licorice is a famous traditional Chinese medicine in China. It has a long history of use and is widely used. Licorice is leguminous plant licorice, biloba licorice, or light fruit licorice. In addition, due to the large demand of licorice, local customary products include yellow licorice, coarse licorice, and Yunnan licorice. In addition to glycyrrhizic acid, licorice has more than 16 components such as flavonoids. Because licorice is sweet, in some regions of the world, glycyrrhizin is extracted from Glycorrhiza licorice as a sweet additive and added to pastries, candy, chewing gum and other foods.
