本文重点研究了生产工艺参数对方便烩面质量的影响。结果表明:蒸面压力为0.02~0.03MPa,蒸面时间为3.5min,油炸温度为120℃条件下干燥制作的方便烩面品质较好。
This article focuses on the impact of production process parameters on the quality of instant noodles. The results showed that the instant noodles with good steaming surface pressure of 0.02 ~ 0.03MPa, steaming time of 3.5min and frying temperature of 120 ℃ were prepared.
