目的了解沧州市市售食品中主要污染物及有害因素污染现状,为制定有针对性的预防控制措施提供科学依据。方法 2012年-2014年采集沧州市、区、县的超市、农贸市场的食品样本,按照《食品卫生检验方法》和《理化工作手册》中的方法对采集的13大类食品进行检测。结果在所检测的1 800余份食品样品中,豆及豆制品和膨化食品中有害元素的检出率为100.0%,肉及肉制品和蛋及蛋制品的检出率分别是91.4%和93.8%;农药残留检测中水果及其制品的检出率最高,为33.3%;真菌毒素的检测中,粮食及其制品的检出率最高,为78.8%。结论沧州市主要食品中有害因素有不同程度的污染,对人体健康存在潜在威胁,监管部门要加大监管和宣传力度,确保食品安全。
Objective To understand the status quo of the contamination of major pollutants and harmful factors in commercial food in Cangzhou and to provide a scientific basis for the formulation of targeted prevention and control measures. Methods From 2012 to 2014, the food samples of supermarkets and farmers’ markets in Cangzhou City, districts and counties were collected and tested for the 13 categories of food collected according to the methods of “Food Hygiene Inspection Method” and “Physical and Chemical Work Manual”. Results Among the more than 1 800 food samples tested, the detection rate of harmful elements in beans and bean products and puffed food was 100.0%. The detection rates of meat and meat products and egg and egg products were 91.4% and 93.8%, respectively %. The detection rate of fruits and their products in the pesticide residue test was the highest (33.3%). Among the mycotoxins tested, the highest detection rate of grains and their products was 78.8%. Conclusion The main food in Cangzhou harmful elements have different levels of pollution, the potential threat to human health, regulatory authorities should step up supervision and publicity efforts to ensure food safety.
