目的掌握中卫市沙坡头区餐饮业餐具消毒状况,为今后进一步加强餐具消毒监督检查工作提供依据。方法餐具采样方法使用大肠菌群快速检验纸片法,对2006-2011年中卫市沙坡头区餐具消毒监测结果及影响因素进行分析。结果餐具消毒合格率逐年呈上升趋势,大型餐馆比中型餐馆餐具消毒合格率略高,小型餐馆餐饮具消毒合格率最低。结论说明监管部门监管有力,提示今后应加强对小型餐馆监管,推行集中式消毒餐具使用,提高餐具消毒的合格率。
Objective To master the tableware disinfection status of catering industry in Shapotou District of Zhongwei City and provide the basis for further supervision and inspection of tableware disinfection in the future. Methods Dishware sampling method using coliform rapid test paper method, Zhongwei SHABAO headquater tableware disinfection monitoring results and influencing factors were analyzed. Results Tableware disinfection pass rate is rising year by year, large restaurants than medium-sized restaurant tableware disinfection pass rate slightly higher, small restaurants tableware disinfection pass rate is the lowest. The conclusion shows the supervisory authority is strong, suggesting that in the future should strengthen the supervision of small restaurants, the implementation of centralized disinfection tableware use, improve tableware disinfection pass rate.
