目的了解醴陵市餐饮业餐饮具消毒情况,为加强餐饮业监管,规范餐饮具消毒提供科学依据。方法按GB14934-94《食(饮)具消毒卫生标准》采样和检验,结合现场卫生监督检查资料,对检验结果作出评价。结果该市2010年餐饮具消毒监测合格率高于2009年;餐饮具消毒合格率与餐饮单位的量化分级等级有关,A级单位餐饮具消毒合格率最高,B级、C级次之;蒸汽消毒效果最好。结论进一步强化对餐饮服务单位的量化分级管理工作,采取综合措施加强对餐饮单位特别是C级单位的餐饮具消毒监督,确保消费者的卫生安全。
Objective To understand the situation of disinfection of catering tableware in Liling City and provide scientific basis for the regulation of catering industry and the regulation of tableware disinfection. Methods According to GB14934-94 “food (drink) with disinfection health standards” sampling and testing, combined with on-site health supervision and inspection data to evaluate the test results. Results The qualified rate of disinfection monitoring of tableware in 2010 was higher than that of 2009; the pass rate of tableware disinfection was related to the level of quantification and grading of catering units, the rate of qualified disinfection of tableware of Class A was the highest, followed by class B and C; best effect. Conclusion The Company further strengthened the quantitative and hierarchical management of catering service units and adopted comprehensive measures to strengthen the disinfection and supervision of catering establishments, especially C-level units, so as to ensure consumers’ health and safety.
