柿子采后生理、贮藏保鲜、脱涩处理及流通加工等方面的研究工作总是与柿子单宁紧密相联的。日本园艺学者在研究柿子单宁的同时,针对在柿子脱涩处理过程中遇到的一些问题,如脱涩的机理、影响脱涩的因素及脱涩中的生理病害等,作了较为详细的研究。这些研究成果为脱涩理论的完善、脱涩方法的改进、脱涩条件的选择及生理病害的防治提供了可靠的理论依据,并在生产中得以广泛应用。
