目的了解张家口市流通领域熟肉制品亚硝酸盐残留量状况,分析残留量超标的主要原因,为以后的监督检查工作提出参考性建议。方法不定期随机抽样,利用食品安全快速检测技术现场进行监测。结果共检测各类熟肉制品275份,亚硝酸盐残留量合格率为62.91%。结论张家口市流通领域熟肉制品中亚硝酸盐残留量超标情况仍然很严重,应加强对熟肉制品食品从业人员的科学加工意识、卫生知识培训和资格认证及市场监督。
Objective To understand the status of nitrite residues in cooked meat products in the circulation field of Zhangjiakou City and to analyze the main reasons for the excessive residues in the meat products in the field and provide suggestions for future supervision and inspection. Methods Random sampling from time to time, the use of rapid food safety testing technology on-site monitoring. Results A total of 275 samples of cooked meat products were detected. The pass rate of nitrite residues was 62.91%. Conclusion The excess of nitrite residues in cooked meat products in the circulation field of Zhangjiakou City is still very serious. Scientific processing awareness, health knowledge training, qualification certification and market supervision should be strengthened for cooked meat products food practitioners.
