重金属污染是影响食品安全的一个重要因素,主要包括铅、镉、砷、汞等的污染,它们半衰期较长,可通过食物链蓄积[1]。镉进入人体的主要途径是通过食物摄入,主要损害肾脏、骨骼和消化系统[2]。为掌握北京市昌平区食品中镉污染状况,为食品安全性评价和制定针对性措施提供可靠依据,本课题组于2007-2011年对辖区内部分食品进行镉含量监测,现将检测结果分析如下。
Heavy metal pollution is an important factor affecting food safety, mainly including the pollution of lead, cadmium, arsenic, mercury, etc. They have long half-lives and can accumulate through the food chain [1]. Cadmium into the body’s main route is through food intake, the main damage to the kidneys, bones and digestive system [2]. In order to grasp the status of cadmium pollution in foodstuffs in Changping District of Beijing and provide reliable evidences for food safety assessment anddevelopment of targeted measures, our group monitored the cadmium content of some foodstuffs in the area from 2007 to 2011. The test results are as follows .
