味精是一种常用的烹饪调味品,做菜时放入少许味精,不仅可以调味,而且可以增强大脑机能。这是由于味精所含的谷氨酸钠,在消化过程中能分解出谷氨酸。后者在脑组织中在以维生素B_6为辅酶的谷氨酸脱羧酶的催化下可以变成δ-氨基丁酸。它是一种抑制性神经递质,它生成不足,容易引起中枢神经系统的过度兴奋,如出现狂躁或者抽搐。因此,适量吃些味精,对于维持神经系统的功能是有益的。
