食源性致病菌快速检测技术的发展对于我国应对和控制食源性疾病的爆发至关重要。目前在基层监管执法中应用最为广泛的食源性致病菌快速检测技术主要包括以免疫学为基础的酶联免疫吸附技术和免疫磁珠分离技术;以及以分子生物学技术为基础的PCR技术和环介导等温扩增等技术。本篇综述对上述技术的检测特点和应用情况进行了深入的分析,同时,还对在食源性致病菌快速检测领域极具有发展前景的双功能抗体检测技术和变性高效液相色谱分析技术进行了详细的介绍,最后文章分析了目前食源性致病菌快检的技术瓶颈主要在于所有快检技术的建立很难绕过致病菌富集和分离的过程,这一步骤很大程度上延长了食源性致病菌快检所需的时间。研发高效、快速的致病菌富集分离技术是真正实现食源性致病菌快速检测的关键。
