目的了解汝阳县餐饮业从业人员食品卫生知识和卫生行为掌握现况,为进一步开展卫生知识培训提供科学依据。方法采用城区普查与农村整群抽样相结合的方式,对650名汝阳县餐饮业从业人员进行问卷调查。包括一般情况、食品卫生知识和卫生行为三个维度。应用Epidata3.1录入数据、SPSS12.0统计分析。结果汝阳县餐饮业从业人员食品卫生知识的平均得分为(13.42±5.42)分(满分38分),合格率9.91%;卫生行为的平均得分为(10.09±2.30)分(满分12分),合格率80.03%。不同特征人群(年龄、文化程度、工作年限、收入水平、培训次数)卫生知识得分差异具有统计学意义(P<0.05)。Logistic回归分析显示食品卫生知识知晓率的主要影响因素是:文化程度(OR=2.002.P<0.001)、从业年限(OR=1.512,P=0.024)和年龄(OR=1.324,P=0.041)。食品卫生知识知晓与卫生行为之间存在关联(r=0.139,x2=12.341,P<0.05)。结论汝阳县餐饮业从业人员食品卫生知识知晓率偏低。年龄较小、文化程度较低、从业年限较短的从业人员应作为今后食品卫生知识培训的重点。重视岗前食品卫生知识培训对提高卫生行为具有积极意义。
Objective To understand the current situation of food hygiene knowledge and hygiene behavior among employees of catering industry in Ruyang County and provide scientific basis for further training of health knowledge. Methods By means of a combination of urban census and rural cluster sampling, questionnaires were conducted among 650 catering workers in Ruyang County. Including the general situation, food hygiene knowledge and health behavior in three dimensions. Application Epidata3.1 input data, SPSS12.0 statistical analysis. Results The average score of knowledge of food hygiene in Catering industry practitioners in Ruyang was (13.42 ± 5.42) points (out of 38) with a pass rate of 9.91%. The average score of health behaviors was (10.09 ± 2.30) points out of 12 points Pass rate of 80.03%. There were significant differences in scores of health knowledge among different characteristics groups (age, education level, working life, income level and training times) (P <0.05). Logistic regression analysis showed that the main factors influencing the awareness of food hygiene knowledge were educational level (OR = 2.002.P <0.001), working years (OR = 1.512, P = 0.024) and age (OR = 1.324, P = 0.041). There was a correlation between food hygiene knowledge and health behaviors (r = 0.139, x2 = 12.341, P <0.05). Conclusion Ruyang Catering Industry practitioners awareness of food hygiene is low. The younger, less educated and less employed practitioners should be the focus of training in food hygiene in the future. Pay attention to pre-service food hygiene knowledge training to improve health behavior has a positive meaning.
